Jack Cheese And Green Chili Quiche Squares
- 2 whole eggs
- 2 egg whites
- 1/4 c. plus 2 Tbsp. instant dissolving flour
- 3/4 tsp. baking powder
- 1 1/2 c. (6 oz.) Monterey Jack cheese, shredded
- 1 c. low-fat cottage cheese
- 1 (4 oz.) can diced green chilies, drained
- 4 green onions (green and white parts), chopped into 1/8-inch pieces
- 8 sprigs fresh cilantro (leaves only), chopped (optional)
- nonstick vegetable cooking spray
- salsa or picante sauce (for dipping)
- Preheat oven to 350u0b0. Beat eggs and egg whites with electric mixer until fully blended. Combine flour and baking powder and stir to mix well. Add to eggs.
- Beat with electric mixer to blend well. Add Monterey Jack and cottage cheeses, green chilies, green onions and cilantro, if desired.
- Mix well.
- Pour mixture into a 7 x 11-inch nonstick baking pan that has been sprayed with a nonstick vegetable cooking spray. Bake at 350u0b0 for 30 to 35 minutes or until firm and lightly brown on top. Cool in pan for 10 minutes before cutting into 28 squares. Serve warm with salsa or picante sauce for dipping.
