Acini Di Pepe Salad Recipe
- 7 ounce acini di pepe pasta, cooked, rinsed with cool water and liquid removed
- 1 x egg yolk
- 4 ounce Sugar
- 1 Tbsp. all-purpose flour
- 6 ounce Pineapple juice
- 4 ounce Heavy whipping cream
- 1 x pineapple, peeled, cored and diced
- 4 x oranges, peeled, seeded and cut into sections
- 2 c. mini marshmallows
- Combine egg, sugar, flour and juice in a pan over medium heat, stirring constantly till thick.
- Remove from heat, let cold and whisk in cream.
- Add in to pasta and mix well.
- Add in remaining ingredients, mix and chill
