Herb-Marinated Chicken Kabobs(Servings: 4)
- 4 skinless boneless chicken breasts
- 2 small zucchini, cut in 1/2-inch slices
- 1 large red bell pepper, cut in 1-inch squares
- 1/2 c. Heinz gourmet wine vinegar
- 1/2 c. tomato juice
- 2 Tbsp. vegetable oil
- 1 Tbsp. sweet onions, chopped
- 1 Tbsp. brown sugar, packed
- 2 cloves garlic, minced
- 1/2 tsp. dried oregano, crushed
- 1/2 tsp. black pepper
- Lightly flatten chicken breasts; cut each breast lengthwise into 3 one-inch strips.
- Place chicken in bowl with zucchini and bell pepper.
- For marinade, combine vinegar and remaining ingredients in jar.
- Cover; shake vigorously.
- Pour marinade over chicken and vegetables.
- Cover and marinate in refrigerator for 1 hour.
- Drain marinade into small saucepan.
- Boil marinade. Alternately thread chicken and vegetables onto skewers; brush with marinade.
- Broil 3 to 5 inches from heat source, until chicken is cooked, about 8 to 10 minutes.
- Turn and brush occasionally with marinade.
- Serve with rice, if desired.
