Amaretti Cookies # 3

  1. Beat egg whites until frothey.
  2. Slowly add sugar and salt.
  3. Beat until quite thick.
  4. Fold in almonds and almond extract.
  5. Drop by teaspoon onto a buttered and floured cookie sheet; let sit for 2 hours.
  6. Then bake at 350F (180C) until pale brown (about 12 minutes).
