Apple Cake
- 3 c. flour
- 2 c. sugar plus 3/4 c. for topping
- 1 c. vegetable oil
- 1/4 c. orange juice
- 4 eggs
- 3 tsp. baking powder
- 5 or 6 apples, peeled and sliced thin
- 1/3 c. ReaLemon
- 1 Tbsp. cinnamon
- 1/4 c. chopped nuts
- 2 1/2 tsp. vanilla
- In a large bowl, mix together 2 cups sugar, flour, oil, juice, eggs, vanilla and baking powder.
- Combine cinnamon with 3/4 cup sugar.
- Mix apples with lemon juice and some of the cinnamon-sugar.
- Let stand about 10 minutes.
- Pour half of the batter into a well-greased 13 x 9 x 2-inch pan.
- Top the batter with apple mixture and then with remaining batter.
- Sprinkle with nuts and the remaining cinnamon-sugar.
- Bake in preheated 325u0b0 oven for 1 hour and 30 minutes.
- Cool in pan and cut in squares.
