Meatloaf Supreme
- 1 12 lbs ground chuck
- 1 cup plain breadcrumbs
- 1 medium onion, chopped
- 1 large egg
- 1 12 teaspoons salt
- 14 teaspoon pepper
- 15 ounces tomato sauce, divided
- 12 cup water
- 3 tablespoons vinegar
- 3 tablespoons brown sugar
- 2 tablespoons mustard
- 2 teaspoons Worcestershire sauce
- 1 dash Tabasco sauce
- onion (optional)
- carrot (optional)
- Mix together ground chuck, breadcrumbs, onion, egg, salt, pepper and 4 oz.
- of tomato sauce and form into a log.
- In a separate bowl, mix together the rest of the tomato sauce, water, vinegar, brown sugar, mustard, worcestershire, and tabasco.
- Set sauce aside.
- Place loaf in a shallow baking pan and arrange peeled onions and carrots around loaf.
- *If softer carrots are desired, microwave first for a few minutes.
- Pour sauce over loaf and veggies.
- Bake at 350 degrees for 1 1/2 hours.
