Farmer's Wife's Sauce (Sugo alla Contadina)
- 1/4 lb. of pancetta
- 4 inch cubed
- 2 cloves of garlic, sliced
- 1/2 onion diced
- 1 leek sliced thin
- 1-1/2 cup peas
- 1 cup of white wine
- 2 cups of bechamela
- 1/2 cup of grated Grana Padana
- 1/4 cup of Pecorino
- In a saute pan over a medium heat, brown the pancetta and drain off most of the fat except 1 tablespoon.
- Add in the garlic and onion and saute till soft and translucent.
- Next add in the peas and wine and reduce the liquid by 3/4ths.
- Add the bechamela and simmer for about 5 minutes, add in the Grana Padana or Pecorino and serve over your favorite pasta or pork roast
