Farmer's Wife's Sauce (Sugo alla Contadina)

  1. In a saute pan over a medium heat, brown the pancetta and drain off most of the fat except 1 tablespoon.
  2. Add in the garlic and onion and saute till soft and translucent.
  3. Next add in the peas and wine and reduce the liquid by 3/4ths.
  4. Add the bechamela and simmer for about 5 minutes, add in the Grana Padana or Pecorino and serve over your favorite pasta or pork roast
