Creamy Celery And Garlic Soup
- 1/2 Tbsp. oil
- 3 green onions, chopped
- 1 small head garlic, cloves separated and peeled
- 5 celery ribs (without leaves)
- 1 medium potato, peeled and diced
- 2 1/2 c. water, divided
- 2 tsp. low sodium instant chicken bouillon granules
- 1 tsp. dried parsley flakes
- 1/8 tsp. pepper
- 1/4 tsp. salt
- 1/4 c. grated Parmesan cheese (optional)
- Combine oil and green onion in a microwaveproof 2-quart casserole dish.
- Microwave, uncovered, on High for 2 minutes, or until soft.
- Add garlic, celery, potato, 1/2 cup water, bouillon granules and parsley flakes.
- Cover and microwave on High for 8 minutes or until vegetables are soft, stirring once.
- Place in processor or blender with pepper and salt.
- Cover and microwave on High for 1 to 2 minutes, until heated through.
- Add grated cheese, if desired.
- Serves 6.
