Creamy Celery And Garlic Soup

  1. Combine oil and green onion in a microwaveproof 2-quart casserole dish.
  2. Microwave, uncovered, on High for 2 minutes, or until soft.
  3. Add garlic, celery, potato, 1/2 cup water, bouillon granules and parsley flakes.
  4. Cover and microwave on High for 8 minutes or until vegetables are soft, stirring once.
  5. Place in processor or blender with pepper and salt.
  6. Cover and microwave on High for 1 to 2 minutes, until heated through.
  7. Add grated cheese, if desired.
  8. Serves 6.
