Sevaiyan (Semiya) Kheer

  1. In a small pan, take the ghee, and roast the dry fruits until the cashew nuts become brown, and the raisins puff up.
  2. Turn off the heat.
  3. In a saucepan, bring the milk to a rolling boil, stirring constantly.
  4. Add the sugar and the cardamom powder.
  5. Stir for another minute.
  6. Add the roasted vermicelli, and continue to boil on low/medium heat.
  7. In about 5-6 minutes, the vermicelli should be cooked through completely.
  8. And most of the dry fruits, leaving aside a few pieces for garnish.
  9. Serve in individual portions, and garnish with the remaining dry fruits.
  10. Serve hot, and enjoy!
