Annie Wade's Sweet Potato Souffle Recipe
- 3 c. mashed cooked sweet potatoes, 2 large, peeled
- 1/4 c. brown sugar
- 3 Tbsp. butter
- 4 x Large eggs, beaten
- 1/4 c. light rum
- 1/4 tsp cinnamon
- Preheat oven to 350 F.
- Combine the mashed sweet potatoes with the rest of the ingredients.
- Beat well by hand or possibly with an electric mixer.
- Fold into a buttered 2 qt baking dish.
- Bake for 45 to 50 min or possibly till a knife inserted into the center comes out clean and the top is hard and golden brown.
