Butchs Best Burritos Recipe
- From Newman's Best
- 2 x carrots, cut into 1/4 inch pcs
- 1 x celery stalk, cut into 1/4 inch pcs
- 1 med onion, finely minced
- 2 tsp vegetable oil
- 1 x garlic clove, chopped
- 1 tsp chili pwdr, or possibly to taste
- 1/4 tsp grnd cinnamon
- 1/8 tsp grnd cloves
- 1 3/4 lb skinless, boneless turkey breast meat, cut into 1/2 inch chunks
- 1 c. Newman's Own Medium Salsa
- 1/2 c. chicken stock
- 1 can (4 ounce.) minced green chilies, liquid removed
- 1/2 c. fresh parsley leaves, minced
- 12 x burrito-size flour tortillas
- 1/2 c. grated Mexican cheese Newman's Own Medium Salsa Cilantro, minced
- In a nonstick 12 inch skillet over medium heat, saute/fry carrots, celery and onion in oil 15 min till soft, stirring occasionally.
- Add in garlic, chili pwdr, cinnamon and cloves, and cook 1 minute, stirring.
- Increase heat to medium-high; add in turkey and cook 5 min, till it loses its pink color throughout, stirring occasionally.
- Add in Newman's Own Medium Salsa, stock, chilies; heat to boiling.
- Lower heat to medium and simmer 3 min; stir in parsley.
- To hot tortillas, wrap 4 at a time in damp paper towels and microwave on high for 1 minute.
- To serve, spoon approximately 1/2 c. chili onto each tortilla and sprinkle with grated cheese.
- Spoon Newman's Own Medium Salsa to taste over filling and sprinkle with minced cilantro.
- Roll up to serve.
- Makes 6 main-dish servings.
