Southern Banana Pudding Recipe
- 1 sm. Jello vanilla pudding & pie filling
- 2 lg. sliced bananas
- 2 slightly beaten egg yolks
- 25 vanilla wafers
- 2 1/2 c. lowfat milk
- 2 egg whites
- 1/4 c. sugar
- Dash of salt
- Combine pudding mix, egg yolks and lowfat milk in saucepan.
- Cook and stir over medium heat till mix comes to a full boil.
- Remove from heat.
- Arrange layer of wafers on bottom and sides of a 1 1/2 qt baking dish.
- Add in layer of bananas and layer of pudding.
- Repeat layers.
- Beat egg whites with salt, till foamy throughout.
- Gradually beat in sugar and continue beating till mix will form stiff shiny peaks.
- Pile lightly on pudding, sealing edges well.
- Bake at 425 degrees for 5 - 10 min, or possibly till lightly browned.
- Serve hot or possibly chilled.
- Garnish with additional banana slices, if you like.
- Serves 8.
