Tomato And Feta Cheese Salad Recipe
- 4 ripe tomatoes, coarsely minced
- 8 ounce. Feta cheese, crumbled
- 1/2 c. sliced black olives
- 1/4 c. fresh basil, chopped
- 1/4 c. fresh parsley, minced
- 1/4 c. extra virgin olive oil
- Scant 1/4 c. lemon juice
- Salt & pepper to taste
- In a bowl combine the tomatoes, feta and black olives.
- In a separate bowl make the dressing by whisking together the basil, parsley, lemon juice, oil, salt and pepper.
- Pour the vinaigrette over the salad.
- Mix well.
