Vidalia Onion Scallop

  1. Preheat oven to 350u0b0.
  2. Peel and slice onions.
  3. Melt 1/4 cup butter in skillet.
  4. Add onions and green pepper.
  5. Cook until tender.
  6. Stir in chopped pimiento.
  7. Place half of onion mixture in shallow baking dish.
  8. Sprinkle with 1/2 cup grated cheese and 1/2 cup cracker crumbs.
  9. Repeat layers of onions and cheese.
  10. Beat eggs with light cream, salt and pepper.
  11. Pour over onions. Combine remaining cracker crumbs with melted butter.
  12. Sprinkle over top.
  13. Bake at 350u0b0 for 25 minutes, or until set.
  14. Yields 6 to 8 servings.
