Vidalia Onion Scallop
- 3 medium Vidalia onions
- 1/4 c. butter
- 1/4 c. chopped green pepper
- 2 Tbsp. chopped pimiento
- 1 c. grated Swiss cheese
- 1 c. cracker crumbs
- 2 eggs, beaten
- 3/4 c. light cream
- 1 tsp. salt
- 1/8 tsp. white pepper
- 2 Tbsp. butter, melted
- Preheat oven to 350u0b0.
- Peel and slice onions.
- Melt 1/4 cup butter in skillet.
- Add onions and green pepper.
- Cook until tender.
- Stir in chopped pimiento.
- Place half of onion mixture in shallow baking dish.
- Sprinkle with 1/2 cup grated cheese and 1/2 cup cracker crumbs.
- Repeat layers of onions and cheese.
- Beat eggs with light cream, salt and pepper.
- Pour over onions. Combine remaining cracker crumbs with melted butter.
- Sprinkle over top.
- Bake at 350u0b0 for 25 minutes, or until set.
- Yields 6 to 8 servings.
