Chili-Rubbed Salmon with Cabbage & Black Bean Medley
- 6 Tbsp. chili powder
- 1 Tbsp. dried thyme leaves
- 1-1/2 tsp. garlic powder
- 24 each salmon fillets (4 oz./115 g each) Walmart Supercenter 1 lb For $5.00 thru 02/14
- 2 Tbsp. canola oil
- 1-1/2 cups Kraft Calorie-Wise Zesty Italian Dressing
- 3 qt. red cabbage, shredded
- 3 qt. canned black beans, rinsed
- 3/4 cup fresh cilantro, chopped
- 6 each limes, each cut into 8 wedges Safeway 3 ct For $1.00 thru 02/09
- Mix seasonings; rub about 1 tsp.
- (5 mL) evenly onto flesh sides of each salmon fillet.
- Refrigerate until ready to use.
- For each serving: Heat 1/4 tsp.
- (1 mL) oil in small nonstick skillet on medium-high heat.
- Add 1 salmon fillet; cook 4 min.
- on each side or until fish flakes easily with fork.
- Meanwhile, heat about 1 Tbsp.
- (15 mL) dressing in medium nonstick skillet on medium-high heat.
- Add 1/2 cup (125 mL) cabbage; cook 1 min., stirring constantly.
- Stir in 1/2 cup (125 mL) beans; cook and stir 2 min.
- or until heated through.
- Remove from heat; stir in 1-1/2 tsp.
- (7 mL) cilantro.
- Spoon cabbage mixture onto serving plate; top with fish.
- Squeeze juice from 1 lime wedge over fish.
- Garnish with second lime wedge.
