Baked Cherry Tomatoes With Parmesan Topping Recipe

  1. Pour oil into 13- by 9- by 2-inch broilerproof ceramic baking dish.
  2. Add in tomatoes; turn to coat with oil.
  3. Sprinkle with salt and pepper.
  4. Top with parsley and cheese.
  5. (Can be made 1 day ahead.
  6. Cover; chill.)
  7. Preheat oven to 400 degrees.
  8. Bake tomatoes just till plump and shiny but not split, about 10 min.
  9. Preheat broiler.
  10. Broil till tomatoes begin to split and cheese begins to color, about 2 min.
  11. Serve warm or possibly hot.
  12. This recipe yields 8 servings.
