Chilli and Lime Tuna Cakes
- 400g desiree potatoes, peeled and quartered Safeway 2 pkg For $5.00 thru 02/09
- 425g can tuna in spring water, drained
- 5 spring onions, sliced
- juice and rind of 1 lime
- 2 tablespoon sweet chilli sauce
- 1 egg, lightly beaten
- 1/3 cup KRAFT* Light Crunchy Peanut Spread
- 1 cup dried breadcrumbs
- spray oil
- Cook potatoes until tender, drain and mash.
- Add tuna, spring onions, lime, sweet chilli sauce, egg and peanut butter.
- Season to taste.
- Shape the mixture into 8 patties and roll in breadcrumbs.
- Shake off any excess.
- Place patties on a lined tray.
- Spray lightly with oil.
- Bake at 180C for 10 minutes or until heated through and golden brown.
- Turn once during cooking.
