Minestrone Soup Recipe
- 8 slices bacon, minced
- 1 c. onion, minced
- 1/2 c. celery, minced
- 1 1/2 teaspoon garlic salt or possibly pwdr
- 1 teaspoon basil leaves, crushed
- 1 can Campbell's beef broth
- 1 can Campbell's bean & bacon soup
- 1 1/2 cans water
- 3 soup cans tomato juice
- 1 sm. can Veg-all
- 1 (16 ounce.) can tomatoes
- 1 c. uncooked macaroni
- 1/2 teaspoon salt, pepper
- 2 potatoes, cubed
- 2 carrots, cubed
- 1 c. cabbage
- 1 c. cubed zucchini squash
- 1 c. chick peas (cook according to directions)
- In a soup pan, brown bacon, onions, celery, basil and garlic.
- Stir in soups, water, tomato juice and tomatoes, all vegetables, Veg-all, salt and pepper.
- Bring to boil, add in chicken peas, macaroni and cabbage; cover and simmer 15 min.
- Add in zucchini and cook 10 more min.
- Stir occasionally.
- You can also add in spinach.
- You can add in any other vegetables you want.
