Seafood Gumbo

  1. In a 5-quart Dutch oven, in very hot salad oil, gradually cook flour until dark brown.
  2. Stir in diced onion, diced green pepper, garlic, salt and diced celery.
  3. Cook until tender.
  4. Add tomatoes with their liquid, okra and water.
  5. Heat to boiling. Reduce heat to low.
  6. Cover and simmer 30 minutes or until mixture thickens.
  7. Add shrimp, crab and hot sauce.
  8. Cook 10 minutes. Serve in soup bowls over scoop of rice.
  9. Serves 8.
