Seafood Gumbo
- 1/4 c. salad oil
- 1/4 c. flour
- 1 large onion, diced
- 1 large green pepper
- 2 tsp. garlic
- 4 tsp. salt
- 2 large celery stalks
- 2 (16 oz.) cans tomatoes
- 1 (10 oz.) pkg. okra
- 6 c. water
- 1 lb. shrimp
- 1/2 lb. fresh or 16 oz. pkg. Alaska King crab
- 1/4 to 1/2 c. hot sauce (optional)
- hot cooked rice
- In a 5-quart Dutch oven, in very hot salad oil, gradually cook flour until dark brown.
- Stir in diced onion, diced green pepper, garlic, salt and diced celery.
- Cook until tender.
- Add tomatoes with their liquid, okra and water.
- Heat to boiling. Reduce heat to low.
- Cover and simmer 30 minutes or until mixture thickens.
- Add shrimp, crab and hot sauce.
- Cook 10 minutes. Serve in soup bowls over scoop of rice.
- Serves 8.
