Quinoa with Shiitake Gravy

  1. Cook Quinoa according to package directions.
  2. Soak Shiitake mushrooms until soft about 30 to 45 minutes.
  3. Bring 2 cups of water to a boil.
  4. When shiitakes are soft remove stems and slice caps.
  5. Add soaking liquid and and shiitakes to boiling water and cook for 30 minutes.
  6. Add sliced onions, cook another 5 minutes.
  7. Add remaining water and shoyu, bring to a boil, stir in dissolved kudzu, turn off heat.
  8. Liquid will thicken and become clear.
  9. Serve over Quinoa.
  10. Garnish wtih chopped green onions.
