Lemon Italian Ice
- 1 lemon, juice from
- 12 ounce unsweetened lemonade mix
- 1 cup Splenda sugar substitute
- 2 tablespoons sugar
- 2 tablespoons lemon pulp
- 2 cups water
- squeeze juice from lemon, add 1 cup water and simmer with sugar and lemon pulp in saucepan for 2 minutes.
- Remove from heat and allow to cool slightly, stirr in splenda and kool aid mix.
- Once solutes are dissolved, dilute with remaining water and add to appropriate containers for freezing.
- Freeze 2 to 4 hours, but periodically stir to make sure solutes do not settle in the bottom and serve.
