Meat And Rice Mold
- 2 lb. lean chuck, cut into 1-inch cubes
- 6 Tbsp. butter
- 3 medium onions, chopped
- 1/3 c. red wine
- 1 (8 oz.) can tomato sauce
- 2 c. water
- salt and pepper to taste
- dash of ground cinnamon
- 2 c. long grain rice
- In a large heavy saucepan, brown meat in butter.
- Add onions and saute until tender.
- Add remaining ingredients, except rice; cover and simmer for 1 hour or until meat is tender.
- Add more water if necessary.
- About 30 minutes before meat is ready, prepare rice according to package directions; set aside.
- Place all the meat and half the sauce in bottom of a 9 x 11-inch ring mold.
- Add cooked rice and pack tightly.
- Turn out onto a heated round serving platter.
- Serve remaining sauce separately. Garnish with parsley.
- Serves 6.
