Meat And Rice Mold

  1. In a large heavy saucepan, brown meat in butter.
  2. Add onions and saute until tender.
  3. Add remaining ingredients, except rice; cover and simmer for 1 hour or until meat is tender.
  4. Add more water if necessary.
  5. About 30 minutes before meat is ready, prepare rice according to package directions; set aside.
  6. Place all the meat and half the sauce in bottom of a 9 x 11-inch ring mold.
  7. Add cooked rice and pack tightly.
  8. Turn out onto a heated round serving platter.
  9. Serve remaining sauce separately. Garnish with parsley.
  10. Serves 6.
