Danielle'S Favorite Chocolate Chunk Cookies
- 5 c. flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 lb. butter (unsalted)
- 2 c. sugar
- 2 c. brown sugar
- 4 eggs
- 1 Tbsp. pure vanilla
- 5 c. partially ground oats
- 2 1/2 c. peanuts, chopped
- 1 1/2 lb. Belgium chocolate or other imported or chocolate chips
- 1 c. sun-dried cherries
- 1 1/2 c. coconut ribbons
- Sift dry ingredients together; set aside.
- Blend together the butter until light and fluffy.
- Add eggs, one at a time.
- Then add 1 tablespoon vanilla.
- Pulse (on/off in food processor) the oatmeal.
- Set aside.
- Add the flour gradually to the butter mixture, then add the oats (do not overmix).
- Add the nuts.
- Mix until just mixed in.
- Drop onto cookie sheets (use parchment paper if you have any) in golf ball size for bigger cookies or 1/2 of that for smaller cookies.
- Bake 12 minutes at 350u0b0.
