Fresh and Tasty Black Bean Salsa
- 2 cans Black Beans, 15.25 Oz Each, Drained And Rinsed
- 9 ounces, weight Sweet White Corn. If Using Canned, Drain, If Using Frozen, Be Sure To Thaw.
- 1 whole Medium Tomato, Diced
- 1 whole Medium Avocado, Peeled, Pitted, And Diced
- 13 cups Chopped Fresh Parsley, Either Curly Or Flat Will Work Fine
- 1/4 cups Fresh Lime Juice
- 1- 1/2 teaspoon Cumin
- 1 package (3/4 Oz.) Garlic-Herb Seasoning/salad Dressing Mix
- 1/2 teaspoons Freshly Ground Black Pepper, Or To Taste
- If youve got tupperware or something similar, this is very easy to make.
- Dump everything into a bowl, put the lid on, and shake it up.
- Make sure that there arent any dry clumps of seasonings anywhere.
- Otherwise, just mix the lime juice and seasonings in one small bowl, and then add them to the veggies in a larger bowl and stir to mix well.
- Cover and chill about an hour, serve.
- We usually just eat this as a dip with tortilla chips, but I have also made it to serve over grilled chicken on a bed of rice, or wrapped up with grilled shrimp in a leaf of lettuce.
- Personally, this recipe is perfect for me as Im not fond of very spicy food.
- However, if youre more adventurous, this is easily modified.
- Substitute cilantro for the parsley, cayenne for the black pepper, or the juice from a jar of jalapenos for the lime juice.
- Stir in some chopped fresh jalapenos or your other favorite pepper, and maybe some raw onion.
- Some may also enjoy a sprinkling of kosher salt to taste.
