Toasted-Sesame Salmon
- 1 egg white
- 3 tbsp. sesame seeds
- 1/2 tsp. salt
- 1/4 tsp. coarsely ground black pepper
- 4 piece center-cut salmon fillet with skin
- Lemon slices (optional)
- In small bowl, lightly beat egg white with 1 tablespoon water.
- On waxed paper, mix sesame seeds, salt, and pepper.
- Dip flesh side of each piece of salmon fillet in egg-white mixture, then dip same side in sesame-seed mixture to coat.
- Heat nonstick 10-inch skillet over medium-high heat until hot.
- Add salmon fillets, sesame-seed side down, and cook 3 minutes.
- With pancake turner, turn salmon over and cook 5 to 7 minutes longer, until fish flakes easily when tested with a fork.
- Serve salmon with lemon slices if you like.
