Chicken and Corn Scallop
- 3 lb. frying chicken, cut up
- 2 tbsp. butter
- margarine
- 1-1/2 tsp. paprika
- 1 tsp. garlic salt
- 1/4 tsp. pepper
- 1 cup Finely crushed saltine crackers
- 1/4 cup butter
- margarine
- 1/4 cup flour
- 1/2 tsp. salt
- 1/2 cup milk
- 1 egg
- 2 cans (1-1/8 lb. each) cream-style corn
- 1/2 cup finely chopped onion
- In a large frying pan, brown chicken in 2 tbsp.
- butter.
- Sprinkle with paprika, garlic salt and pepper.
- Meanwhile, prepare Corn Mixture.
- In a large mixing bowl, combie flour, salt, milk and egg.
- Beat until smooth.
- Add corn and onion and mix well.
- Spoon Corn Mixture over browned chicken.
- Reduce heat and simmer uncovered, stirring occasionally, for 30 to 40 minutes until chicken is tender.
- While chicken is cooking, brown cracker crumbs in 1/4 cup butter in a small frying pan.
- To serve, garnish chicken with buttered crumbs.
