Beef Skewers with Peanut Dipping Sauce

  1. Place steak strips in small resealable plastic bag.
  2. Add 1/4 cup of the dressing; seal bag.
  3. Refrigerate at least 1 hour to marinate.
  4. Meanwhile, place remaining 1/4 cup dressing, the peanuts, water, lime juice, soy sauce and ground red pepper in blender container; cover.
  5. Blend until smooth.
  6. Pour into bowl; cover.
  7. Refrigerate until ready to use.
  8. Preheat grill to medium heat.
  9. Remove steak strips from marinade; discard marinade.
  10. Thread steak strips, mushrooms, peppers and green onions onto 24 wooden skewers.
  11. (You should have 1 steak strip and 1 vegetable piece on each skewer.)
  12. Grill skewers 5 to 6 min.
  13. or until steak is cooked through, turning occasionally.
  14. Serve warm with the dipping sauce.
