Cajun Style Shrimp
- 2 slices bacon
- 2 tablespoons flour
- 1 medium onion (chopped)
- 12 cup chopped celery
- 12 cup chopped green bell pepper
- 1 large garlic clove (minced)
- 12 teaspoon dried crushed thyme leaves
- 12 cup v- 8 vegetable juice
- 1 tablespoon hot sauce
- 1 lb large shrimp (shelled and deveined)
- 4 cups cooked rice
- In large skillet cook bacon until crisp.
- Set aside.
- In 2T.
- drippings cook flour 1 minute, stirring constantly.
- Add veggies and thyme.
- Cook until veggies are tender, stirring occasionally.
- Stir in V8 juice, hot sauce and shrimp.
- Cook until shrimp are pink and opaque.
- Serve over hot cooked rice.
- Top with crumbled bacon, if desired.
