1992 Farm And City Insurance Chili Cookoff First Place Winner
- 1 Tbsp. cooking oil
- 1 chicken stir-fry, cubed
- 3 medium onions, sliced
- 1 large onion, chopped
- 1 stalk celery, diced
- 1 Tbsp. vinegar
- 1 can tomato sauce
- 1 can Ro-Tel tomatoes
- 1 lb. pork stir-fry, cubed
- 1 lb. beef stir-fry, cubed
- 2 lb. ground sirloin
- 1 carrot, diced
- 4 cloves garlic, chopped
- 1 green pepper, diced
- 1 can whole tomatoes and liquid
- 2 cans chicken broth
- 5 Tbsp. chili powder
- 1 tsp. salt
- 2 Tbsp. paprika
- 1/2 tsp. oregano
- 1/4 tsp. red pepper
- 1 tsp. garlic powder
- 1/4 tsp. black pepper
- 1 bay leaf
- 1/2 c. beer (go ahead, put the whole can in)
- 1 Tbsp. cumin
- Brown cubed meat in cooking oil.
- Add ground meat and brown. Add onion, carrot, garlic, celery and green pepper; stir until limp.
- Add balance of ingredients and bring to a boil.
- Simmer for at least one hour.
