Savoury Mexicana Fruit Salad
- 1 (600 g) bageurope's best summer fruit salad, defrosted
- 1 granny smith apple, cored and cut in 1/2-inch pieces
- 1 small red onion, thinly sliced
- 12 cup sweet red pepper, diced
- 2 jalapeno peppers, seeded and chopped
- 1 12 tablespoons lime juice
- 1 teaspoon coarse salt
- 2 green onions, coarsely chopped
- 1 avocado, peeled and diced (optional)
- 3 tablespoons cilantro, coarsely chopped
- In a large bowl, combine Summer fruit salad, apple onion, red pepper, and jalapeno peppers.
- Add lime juice and salt.
- Serve immediately or refrigerate for up to one hour.
- Toss salad lightly.
- Transfer to serving dish.
- Garnish with onions, avocado, and cilantro.
- Salad can be made 3-4 hours ahead, adding avocado, just before serving.
