Caramel Cups
- 6 oz. Softened Cream Cheese
- 2 sticks Soft Oleo
- Butter
- 2 cups Flour
- 1 pkg. Light Kraft Caramels
- 1/2 cup Evaporated Milk
- 1/2 cup Oleo
- Butter
- 1/2 cup Crisco
- 2/3 cup White Sugar
- 3/4 cup Evaporated Milk
- 1 tsp. Vanilla
- SHELL: Beat together cream cheese and butter.
- Gradually add in flour.
- Mix well, and form into small tart pan.
- (Or mini muffin pan).
- Bake at 350 for 15 minutes.
- FILLING: In a medium sized saucepan, stir together milk and caramels over medium-low heat until melted and smooth.
- *Stirring constantly to avoid scorching.
- Spoon into baked tart shells, and let cool completely.
- ICING: Beat all ingredients together until mixture stands in stiff peaks.
- Spoon or pipe on top of cooled caramel cups.
- Sprinkle with nuts (optional).
