Red Kidney Bean Curry
- 1 (15 ounce) can red kidney beans, drained
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 12 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 12 inch gingerroot, peeled & chopped
- 4 garlic cloves, chopped
- 1 teaspoon ground red pepper
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 12 teaspoon ground turmeric
- 1 (15 ounce) can diced tomatoes
- 2 green chilies, chopped
- 1 tablespoon fresh cilantro, chopped
- 34 cup water
- Saute onion in oil for 2-3 minutes Add cinnamon & next 3 ingredients & cook for 1 minute Add ground red pepper & next 7 ingredients.
- Stir & add beans.
- Boil, reduce heat, & simmer for 20 minutes.
