Sweet Potato Waffles
- Sweet Potato Waffles
- 2-1/2 qt. shredded peeled sweet potatoes
- 4 each egg whites
- 3/4 cup all-purpose flour
- 1/4 cup milk
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- Toppings
- 2 qt. JET-PUFFED Miniature Marshmallows
- 3/4 cup maple syrup
- 1 Tbsp. cinnamon sugar
- 3/4 cup pistachios, chopped
- 3/4 cup OSCAR MAYER Bacon Pieces, warmed
- Sweet Potato Waffles: Combine ingredients in bowl.
- Portion 1/4 cup mixture into center of a Belgian waffle maker sprayed with cooking spray; close lid.
- Cook 8 to 10 min.
- or until evenly browned on both sides and fully cooked on the inside.
- Continue with remaining batter.
- For each serving: Arrange 2 waffles on broiler pan; top each with 1/3 cup marshmallows.
- Toast marshmallows under salamander or with kitchen torch until golden brown.
- Stack toasted waffles on serving plate then drizzle with 1 Tbsp.
- maple syrup.
- Top with 1/4 tsp.
- cinnamon sugar and 1 Tbsp.
- each nuts and bacon pieces.
