Mrs. George Washington'S Crab Soup

  1. Pick out the meat of the crabs which have been boiled for 30 minutes. Set aside until needed. Mash the boiled eggs to a paste with a fork and to them add the butter, flour, lemon peel and a little pepper. Bring the milk to a boil and gradually pour into the egg mixture. Place over a low heat, add the crab meat and simmer for 5 minutes. Add the cream bring back to boiling point, add the sherry, salt and Worcestershire sauce. Heat sufficiently to serve, but do not boil after the sherry has been added. Serves 10-12 people.
