Grilled Reuben Sandwich(4 Servings)
- 1/2 c. mayonnaise
- 1 Tbsp. ketchup
- 1 Tbsp. horseradish
- 1 Tbsp. chopped fresh parsley
- 1/4 tsp. pepper
- 8 slices rye bread
- 3/4 lb. sliced corned beef
- 1 c. sauerkraut
- 4 slices (4 oz.) Gruyre or other Swiss cheese
- 2 Tbsp. butter
- Combine the mayonnaise, ketchup, horseradish, parsley and pepper. Spread this sauce on bread. Layer the corned beef and sauerkraut on 4 slices of the bread, and top with the cheese. Cover with the remaining bread and spread with 1 tablespoon of the butter. Melt the remaining 1 tablespoon butter in a large nonstick frying pan over medium heat. Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes on each side.
- Turn and brown the other side.
