Bean Sprout and Aburaage Salad with Yuzu Pepper Dressing

  1. Put the bean sprouts in plenty of water.
  2. Drain when they are crisp.
  3. Make the dressing: Combine the A. ingredients.
  4. Blanch the bean sprouts quickly in salted water.
  5. Drain into a colander.
  6. When they've cooled down, squeeze out the water.
  7. Heat oil (not listed) in a frying pan, and pan fry the aburaage until browned and crisp on both sides.
  8. Cut the aburaage into 5 mm strips.
  9. Just before serving, put the bean sprouts and aburaage into the bowl with the dressing, and mix well.
  10. Transfer to serving plates, and scatter with chopped green onion.
