Roasted Sausage and Grapes
- 1 bunch bunch seedless red grapes
- 3 tsp. olive oil
- 1 lb. sweet Italian turkey or pork sausage links
- 1 1/4 lb. Yukon gold potatoes
- 1 clove garlic
- 1 bag ready-to-cook chopped kale
- 3/4 c. low-fat (1%) milk
- 1 tbsp. balsamic vinegar
- Preheat oven to 450 degrees.
- In 15 1/2" by 10 1/2" jelly-roll pan, toss grapes with 1 teaspoon oil; add sausages to pan.
- Roast 25 minutes or until links are golden and grapes are tender.
- Meanwhile, in microwave-safe bowl, place potatoes; cover.
- Microwave on High 12 minutes or until fork-tender.
- In 6-quart saucepot, heat 2 teaspoons oil with garlic on medium-high for 1 minute.
- Add kale and 1/3 cup water.
- Reduce heat to medium; cover and cook 8 minutes or until kale wilts.
- To potatoes, add milk and 1/4 teaspoon salt; coarsely mash potatoes.
- Remove pan from oven; stir vinegar into pan juices.
- Serve sausage and grapes with potatoes and kale.
