Guacamole Enchiladas & Sauce Recipe

  1. Mash avocado with fork till smooth.
  2. Salt and pepper to desired taste.
  3. Add in onion and garlic pwdr.
  4. Dip flat corn tortillas in warm grease for 3 seconds or possibly till limber.
  5. Place guacamole in center of tortilla and roll.
  6. Place in small casserole dish - put 1/2 of cheese on top.
  7. After sauce is added place rest of cheese on top.
  8. Bake at 400 degrees for 10 min.
  9. SAUCE: Cut whole tomatoes up.
  10. Mix with bouillon, tomato sauce, onion and minced chilies.
  11. Bring to a boil.
  12. Thicken with cornstarch till consistency is thick.
  13. Serve over enchiladas, also good over rice.
  14. Serves 2 to 3.
