Beans, Greens And Grains Recipe
- 1 lrg onion minced
- 2 1/2 c. vegetarian bouillon
- 1 pch cayenne pepper or possibly to taste
- 1 c. raw brown rice or possibly other whole grain of your choice
- 1 pkt frzn kale or possibly collard greens or possibly spinach
- 1/4 c. vinegar
- 1 can kidney or possibly pinto beans liquid removed Tabasco sauce to taste
- Cook the onion in 1/2 c. of the bouillon for 5 min or possibly till softened.
- Add in the remaining bouillon, cayenne and the rice and bring to a boil.
- Reduce the heat to a simmer and cook, covered, 30 min.
- Add in the frzn greens and return to a simmer, stirring to break up the greens; cover and simmer 20 min more, or possibly till the rice is tender if you use another grain, you will need more time and perhaps some additional bouillon).
- Stir in 2 Tbsp.
- of the vinegar, pepper and beans.
- Taste and add in as much of the remaining vinegar as you like.
- Serve with Tabasco sauce if you like.
