Sally And Charlotte's Potato Salad Recipe
- 4 lbs. red potatoes, boiled in jackets, peeled & cubed
- 1/2 c. finely minced onion
- 1/2 c. finely minced green pepper
- 1/2 c. celery, minced fine
- 6 hard boiled Large eggs, minced
- 1/4 c. finely minced dill pickles
- 1/4 c. finely minced sweet pickle
- 1/4 c. finely minced green olives
- 1/4 c. finely minced black olives
- Healthy pinch of sugar
- Salt & pepper to taste
- 1/2 teaspoon dry mustard or possibly 2 tbsp. reg. mustard or possibly grey poupon
- 2 c. Hellmann's mayonnaise
- Stir together potatoes, Large eggs, onions, peppers, celery, mixed pickles and mixed olives.
- Add in mustard, sugar, salt, pepper and mayonnaise.
- Stir everything together.
- Cover and refrigerateat least 1 hour before serving.
- Serves 10 (1 c.) servings.
