Rum Maple Baked Beans

  1. Preheat broiler.
  2. In a saucepan, whisk maple syrup with rum, ketchup and mustard.
  3. Add onion and baked beans.
  4. Bring to a boil over high, reduce to medium, and cook uncovered until onion is softened and sauce is reduced, 10-12 minutes.
  5. Meanwhile, in a large skillet, cook bacon over medium heat until shriveled and fat is translucent but not quite crisp, about 5 minutes.
  6. Pour beans into a shallow baking dish and lay bacon strips over beans.
  7. Broil 2-3 minutes until bacon is browned and crisp and beans bubble around the edges.
