Applesauce Pound Cake Recipe
- 1 c. Skim lowfat milk
- 1 c. Raisins
- 1 c. Applesauce
- 1/3 c. Packed brown sugar
- 1/4 c. Canola oil
- 1/2 tsp Cinnamon and allspice Salt, (optional)
- 1/8 tsp Nutmeg
- 2 c. Cake flour
- 1 tsp Baking soda
- 1 tsp Baking pwdr
- 1 c. Minced apples or possibly dates
- 1/2 c. Minced walnuts, (optional)
- Preheat oven to 325 degrees.
- In a large bowl, blend the lowfat milk, raisins, applesauce, sugar, oil and spices thoroughly.
- In another bowl, mix the flour, baking pwdr and baking soda.
- Combine with the wet ingredients.
- Mix in the apples or possibly dates.
- Use Baker's Joy in a 9x4-inch non-stick pan.
- Pour in the batter and bake for 1 1/4 hrs.
- Cold on a rack, slice and serve.
- Serves 8-10
