Greek-Style Salad with Grilled Romaine
- 2 qt. seedless cucumbers, diced
- 1-1/2 qt. grape tomatoes, cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/2 cups sun-dried tomatoes, chopped
- 1-1/2 cups pitted Kalamata olives, cut in half
- 1-1/2 cups red onions, chopped
- 1-1/2 cups yellow peppers, roasted, diced
- 1 qt. KRAFT Greek Vinaigrette, divided
- to taste salt and black pepper
- 12 each romaine lettuce hearts, cut lengthwise in half
- 1/2 cup olive oil
- 1-1/2 cups feta cheese, crumbled
- Combine cucumbers, grape tomatoes, sun-dried tomatoes, olives, onions and yellow peppers.
- Add 3 cups of the vinaigrette (or 2 Tbsp.
- vinaigrette for trial recipe); toss to coat.
- Season with salt and black pepper.
- Brush romaine with oil.
- Grill on medium heat 30 sec.
