Greek-Style Salad with Grilled Romaine

  1. Combine cucumbers, grape tomatoes, sun-dried tomatoes, olives, onions and yellow peppers.
  2. Add 3 cups of the vinaigrette (or 2 Tbsp.
  3. vinaigrette for trial recipe); toss to coat.
  4. Season with salt and black pepper.
  5. Brush romaine with oil.
  6. Grill on medium heat 30 sec.
  7. to 1 min.
  8. or just until lightly charred.
  9. For each serving: Place 1 romaine piece on plate; drizzle with 1-1/2 Tbsp.
  10. of the remaining vinaigrette.
  11. Spoon 1 cup of the cucumber mixture next to romaine; top with Tbsp.
  12. cheese.
