Oven-Baked Stuffed Poblanos

  1. Heat oven to 350F.
  2. Heat oil in medium saucepan on medium heat.
  3. Add onions and garlic; cook 2 min., stirring frequently.
  4. Add tomatoes, corn, ham and bay leaf; stir.
  5. Cook 10 min., stirring occasionally.
  6. Remove and discard bay leaf.
  7. Fill peppers with tomato mixture; top with cheese.
  8. Place, filled sides up, in single layer in shallow baking dish sprayed with cooking spray.
  9. Bake 15 min.
  10. or until cheese is melted and peppers are heated through.
