Brazilian-Style Grilled Chicken

  1. Reserve 1/4 cup parsley for later use.
  2. Mix remaining parsley with next 5 ingredients until blended.
  3. Loosen skin from leg quarters.
  4. Reserve half the dressing mixture for later use; rub remaining onto chicken meat under skin.
  5. Refrigerate 2 hours.
  6. Heat grill to medium heat.
  7. Grill chicken 40 to 45 min.
  8. or until done (165 degrees F), turning occasionally and brushing with half the reserved dressing mixture for the last 10 min.
  9. Meanwhile, cook rice as directed on package, omitting salt.
  10. Add cheese and remaining parsley to rice; mix lightly.
  11. Brush chicken with remaining dressing mixture.
  12. Serve with rice mixture.
