Easy Chicken Enchiladas

  1. Preheat oven to 350
  2. Boil chicken until falling apart.
  3. Use a fork to shred chicken.
  4. Mix 1/2 can of enchilada sauce, rotel, and shredded chicken together.
  5. Pour 1 can enchilada sauce in the 9x12 (or what ever size pan you are cooking in... depending on how many you choose to make.
  6. ).
  7. Take a scoop of your chicken mixture, as much as you feel necessary.
  8. Roll up the tortilla and place seem down in the pan.
  9. Try and get them pretty snug.
  10. Pour the rest of the enchilada sauce over the tortillas.
  11. Spread 2 cups of cheese on top of that and bake for 20-30 minutes.
