Easy Chicken Enchiladas
- 1 lb chicken breast
- 1 can rotel
- 3 can enchilada sauce (whatever brand is your favorite)
- 2 cup mexi-style cheese
- 8 packages tortilla (fajita style)
- Preheat oven to 350
- Boil chicken until falling apart.
- Use a fork to shred chicken.
- Mix 1/2 can of enchilada sauce, rotel, and shredded chicken together.
- Pour 1 can enchilada sauce in the 9x12 (or what ever size pan you are cooking in... depending on how many you choose to make.
- ).
- Take a scoop of your chicken mixture, as much as you feel necessary.
- Roll up the tortilla and place seem down in the pan.
- Try and get them pretty snug.
- Pour the rest of the enchilada sauce over the tortillas.
- Spread 2 cups of cheese on top of that and bake for 20-30 minutes.
