Scrapple (Breakfast Meat) Recipe

  1. In small bowl, blend cornmeal and water.
  2. In large saucepan, combine pork sausage, salt, sage, parsley and broth.
  3. Gradually stir in 2 c. water.
  4. Break sausage in pcs.
  5. Bring to boil.
  6. Slowly add in cornmeal to mix.
  7. Stir constantly with wire whisk.
  8. Simmer 10 to 15 min.
  9. Pour in 2 (9x5x3 inch) loaf pans.
  10. Cold in refrigerator.
  11. Slice and roll in flour.
  12. Fry till crisp on both sides.
  13. Use small amount of oil to fry.
