Soy Topped Pasta
- 12 lb pasta
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 9 ounces soy vegetarian meatballs
- 2 cups edamame
- 14 ounces extra firm tofu, drained, pressed and crumbled
- 1 12 cups spaghetti sauce
- 1 cup mozzarella cheese, shredded
- Cook pasta according to directions and drain.
- Heat oil in large skillet over medium heat, and saute garlic 2-3 minutes or until golden.
- Add "meatballs" and saute 2 minutes more, or until golden.
- Stir in edamame and tofu, cook 5 minutes, or until excess liquid from tofu is gone.
- Stir in spaghetti sauce, and heat through.
- Stir in cheese, and cook until it melts completely.
- Serve over pasta.
