Beef Tortilla Casserole Recipe
- Basic Red Sauce, *
- 1/2 c. Vegetable Oil
- 1 lb Grnd Beef
- 1/2 c. Onion, Minced, 1 Medium
- 8 ounce Cheddar Cheese, Shreeded, 2C Southwest Guacamole, **
- 10 x Corn Tortillas, ***
- 2 x Anaheim Chiles, ****
- 15 ounce Pinto Beans, Liquid removed, 1 cn Dairy Lowfat sour cream

- *** Tortillas should be 6 to 7-inches in diameter and be cut into
- **** Chiles should be seeded and finely minced.
- Prepare Basic Red Sauce and Southwest Guacamole; set aside.
- Heat oil in 10-inch skillet till warm.
- Cook tortilla strips in oil till light golden, about 1 minute; drain.
- Cook and stir grond beef, chiles, and onion till beef is brown; drain.
- Heat oven to 350 degrees F. Arrange tortilla strips in bottom of greased rectangular baking dish 13 X 9 X 2-inches.
- Top with beef mix, Basic Red Sauce, beans, and cheese.
- Bake till warm and bubbly, 25 to 30 min.
- Serve with Southwest Guacamole and Lowfat sour cream.
