Cajun Egg Salad
- 6 whole Hard-boiled Eggs, Peeled And Chopped
- 3 Tablespoons Mayonnaise
- 1/2 Tablespoons Yellow Mustard
- 3 dashes Tabasco Pepper Sauce
- 2 dashes Creole Seasoning (such As Tony Chachere's)
- 3 dashes Pepper
- 1 dash Salt
- Place all ingredients in a bowl and stir gently with a spoon.
- Add more Tabasco and Creole seasoning if you prefer it spicier and less if you prefer it milder.
- You can also adjust the amounts of mayonnaise and mustard to get the consistency you prefer.
- This makes a great sandwich served on toasted wheat bread.
